You also were supposed to bake your mother a Simnel cake (very dark fruitcake with Marzipan topping). So yesterday for the second year in a row I was treated to Simnel cake. Of course now there is Simnel cake to be eaten for the coming days... And just when I'd managed to trim off the fruitcake weight from Christmas... However, it's a lovely tradition and I do LOVE fruitcake. I'm planning on using that recipe to make the groom's cake for a certain wedding coming up this summer.
